  • Proven experience as Sous Chef – minimum 4 years (CDP minimum 2 years) experience in kitchen managerial role.
  • Exceptional proven ability of kitchen management.
  • Ability in dividing responsibilities and monitoring progress.
  • Outstanding communication and leadership skills.
  • Fluent in English.
  • Credentials in health and safety training.
  • Degree in Culinary science or related certificate.
  • Responsibilities and Duties
  • Assist the Head Chef to Create a rich Japanese fusion cuisine menu with various main ingredients in a modern and exciting presentation.
  • Equipped with good culinary skill. Able to prepare all types of sushi, including Maki and Nigiri would be an advantage.
  • Creative, Attentive, Sharp and has good initiative to assist Management team in all duties related to restaurant management.
  • Manage all food preparation activities well. Able to train new staff.
  • Able to communicate well with Management and able to manage and ensure staff follow company rules and regulations.
  • Good inventory management skills including wastage control.
  • Good leadership, honest and responsible. Diligent in executing management instructions.
  • Maintain high level of hygiene principles and willing to take the initiative to upkeep and maintain restaurant’s good image.

  1. To be responsible for supervising the assigned station within the All-Day Dining Kitchen.
  2. To ensures that his/her station is managed efficiently and according to the established concept statements.
  3. To supervise the Commis de cuisine and the assigned kitchen Trainees.
  4. To ensure that the Fire Life Health Safety and Security company standards and HACCP Standards are maintained and carried out.
  5. They must be monitored regularly to assist in scoring 100% on the MOHG health and safety audit.
  6. Organize food production in a cost effective and hygienic manner.
  7. Prepare menu in accordance with quality, availability and seasonality ingredients and ensure market lists are completed on a daily and weekly basis.
  8. Constantly strive to improve operating procedures.
  9. To perform opening and closing procedures established for the assigned station.
  10. Identify opportunities for improving the efficiency of the operation of the assigned work station that will benefit our guests.
  11. Identify opportunities for reducing costs without affecting the level of service or product received by our guests.
  12. Use the Colleague Handbook in understanding the consistent way of Communicating Rules & Regulation to our Team.
  13. Controls the effort of superior Cleanness throughout the assigned work station.
  14. Control all efforts that our entire superior Save, and Sound codes are in place at all times.
  15. Perform any other reasonable duties as required by the Chef de Cuisine All Day Dining from time to time.

Other’s Requirements:

  • Thorough knowledge of Gastronomy.
  • Working knowledge of beverages.
  • Extensive knowledge of kitchen equipment.
  • Working knowledge of mathematics for recipes, ordering, and financial research purposes.
  • Working knowledge of computers and basic software.
  • Ability to dictate responsibility, pay attention to detail, handle multiple tasks and show a high level of patience.
  • Possess a good written and verbal command of the English Language.
  • Possess a pleasant and outgoing personality.
  • Passionate, creative and an excellent hand on trainer.
